製作流程:
- Make chicken roulade with latik stuffing, roll tight using saran wrap
- Boil for 20min, remove plastic wrap after boiling
- Sear, roll with zucchini and torch
- For sauce, make gulai base using paste and coconut cream
- pour into siphon, charge with NOE, and serve warm
- Garnish with sautéed baby corn, mushroom, barley & multi-color corn, cherry tomato, cauliflower purea, serenading and oils, and tuile.
